Why did you apply to this program?

"I applied to Cal Poly’s M.S. in Agriculture, specialization in food science graduate program because of the opportunities for practical research experience. All of the research happening in this department has a bigger purpose to serve our campus, community, state, and the world. Students in this program are presented with the opportunity to work alongside industry leaders to conquer a challenge that they are facing in their sector of the food and agriculture industry."        


What you will be focusing on for your project?

"My project focuses on carrot mash, which is the byproduct of peeled baby carrot processing. Specifically, I have worked towards characterizing some vital nutrients present in the carrot waste, treating the waste with specific enzymes to produce a prebiotic fiber, and determining its functional properties for use in a ground meat product."

What is your favorite part so far?

"My favorite part of this program so far has been the opportunity to work closely with my faculty advisor and mentoring undergraduates. While developing a project, learning new methodology, and carrying out experiments, I have learned vital people and project management skills that I believe will serve me well in industry."
